I love decorating cookies for Christmas, as not only are they perfect to bake and take along to festive gatherings, they are also a great way to add edible decorations to your Christmas tree if you wrap them up in cute little cellophane bags tied with ribbon!
In November’s Snowflakes & Sparkles edition of Cake Bag you’ll find this lovely snowflake embossing mat from Ellam Sugarcraft.
It’s perfect to use with fondant icing to emboss the snowflake design onto the surface.
In this tutorial I’m going to show you how easy it is to create beautiful icing for your cookies or cupcakes.
You’ll need some ready to roll fondant icing, a rolling pin, a round cookie cutter (I used a fluted one), small paintbrush and silver edible metallic paint or lustre dust mixed with a little rejuvenator fluid or clear alcohol.
First, take a golf ball sized piece of fondant icing.
Spray the surface of the mat with some non-stick cooking spray.
Roll the fondant out to about 3mm thickness then place on top of the embossing mat and press the back to help pick up the design by rolling a small rolling pin over it.
Flip the icing and mat over and gently peel the mat away from the icing to reveal the design.
Use the cookie cutter to cut out a circle, I used the fluted end to create a scalloped edge.
Add more detail using a pointed tool to press dots into the scallops.
Attach to the top of the cookies using a little buttercream or edible glue. Leave to dry out a little before painting the snowflakes with silver edible paint to bring out the snowflake design.
And voila! Super easy yet beautiful Christmas cookies!
