Piping Ruffles

In April’s Magical Mermaid Cake Bag, you would have received a PME Sugar Craft Frill tube for piping ruffles on your cake creations!

All you need to pipe pretty ruffles on your cakes is a batch of your favourite buttercream; I usually use 500g butter mixed with 1kg icing sugar and a little boiling water (about a tablespoon) and 1 teaspoon of flavouring such as vanilla extract. Simply cream the butter, gradually add the icing sugar mixing well in between additions then add the boiling water and extract of choice before giving it one final mix!

Take a large piping bag and snip off the end and insert the frills nozzle.

In this tutorial I’m going to show you how to pipe ruffles on top of cupcakes to create a tutu skirt effect which is perfect to use with the mermaid mould or create a ballet dress topper using a heart cutter to create a bodice.

Fill the piping bag with buttercream and twist the end. Hold the piping bag at a slight angle with the opeining on the nozzle facing towards you and turn the cupcake clockwise whilst piping and the ruffles will form as you pipe.

Once piped, you can add the mermaid without the tails or make the bodice by cutting out a heart and cut off the point and add decorations such as bows and pop on top of the cupcakes!
